You never want ANYONE to say " YOU BURNED THE SALAD!" This is exactly what Spezzano wants you to do in this Fresh Springtime recipe of Charred Escarole salad with Chicken. Actually, you broil it with olive oil and salt and pepper for a few minutes and smother it in a delicious white raisin vinaigrette with that Broiled Chicken on the side. You can use Romaine Lettuce heads too!
